保険食として再認識され始めた、玄米食

 米は、日本穀物食の最重要品ですが、原始時代から玄米を食べていたことは、発掘品その他によって知られています。ところが、その原産地は、南方からというまでで、それ以上は確かなことは分かっていないのです。我が国では水稲主で、陸稲も少し栽培しますが、粳と糯の二種があり、ご飯に炊くのは粳です。今は粳を精白して食べますが、また精白によって失われるビタミン類を強化した強化米が普及しています。

 玄米は、籾摺りをしたままの米ですから、搗精する時に失われる栄養分の損失はありません。蛋白質、脂肪、灰分、繊維等を多量に含んでいます。ことに精白すると失われるビタミン類のうち、ビタミンA、B、E、等を持っているので、栄養価に富んでいます。

 ただ炊き方が悪かったり、食べなれない点で、消化吸収率は白米よりやや劣るといわれます。

味の点でも、上手に焚いて食べなれると、白米よりも甘みのあるものです。

ごく古い書物を見ると、玄米の焼き米ということが出てきますが、これは水に浸した玄米を火で焼いて食べたり、または一度蒸したものを握り飯のようにして、それを焼いたものだそうです。

圧力釜で炊けば、芯までよく蒸し炊きになりますから、楽に玄米飯が食べられますが、普通の釜やご飯蒸しで炊く場合の方法を、この後、二、三上げます。

However, it is said to be slightly less digestible than white rice because it is not cooked properly or is not used to eating.

In terms of taste, if cooked properly, it has a sweeter taste than white rice.

If you look at very old books, you will hear about grilled brown rice, but this is brown rice that has been soaked in water and roasted over a fire, or that has been steamed and then made into rice balls and then grilled. It seems to be a thing.

If you cook it in a pressure cooker, the rice will be well steamed to the core, so you can eat brown rice easily, but I will show you a few ways to cook it in a regular pot or steam rice.
